"Small Hill" Dessert

This cake is my husbands favorite dessert! It is very easy to make and the final product is so delicious. This dessert is made up of layers of soft cherry filled rolls that are to die for. It’s topped with a sour cream frosting and shredded dark chocolate shavings. I recently made this for my brother-in-laws family and they loved it.

I don’t see this dessert often at Russian gatherings but when I do I devour it. I no longer have to wait for someone else to make it, I can do it in the comfort of my own home!




Cherry Roll Ingredients:
1 cup organic sour cream
2 sticks butter ( 8 ounces) softened
2 3/4 cup all-purpose flour
2 glass jars of Dark Merello Cherries in Syrup. (I buy these at trader joes)

Directions:
1. Line cookie pan with parchment paper.
2. In mixer beat the softened butter and the sour cream until well combined. Then slowly add the flour to the mixture until the dough no longer sticks to the sides.
3. Transfer dough to a plate and form small balls, the larger the balls the larger the rolls on the dessert will be. I usually do about 1 1/2- 2 inch balls and that makes about 15 balls. Place them on the plate and put them in the fridge for about 45 minutes to 1 hour until they are good to work with.
4. Once the dough is nice and hardened I place one dough ball on a floured flat surface and roll it out until it is paper-thin. I usually start rolling it out vertically and then horizontally. I then place the merello cherries on one side of the flat dough and gently roll up the edges, covering the all the cherries. I roll it until I reach the other edge. Place the dough roll on the baking pan. Continue this until all your 15 balls of dough are filled with cherries and are on the baking pan. I usually can fit all the dough rolls onto one baking pan, they are somewhat close together which doesn’t affect them baking. Preheat oven to 350 degrees. Bake until they are golden brown, I usually check on them at about 45 minutes. Once they are golden brown I take them out and let them cool completely.

Frosting Ingredients:
1 cup sour cream
1 cup heavy whipping cream
1 cup organic cane sugar
1 tsp vanilla extract

Directions:
1. In mixer bowl beat the heavy whipping cream until it is fluffy.
2. Slowly blend in the sour cream into the whipping cream until combined. Add in the sugar and vanilla.
3. When the frosting is ready and the rolls are cooled. Transfer the rolls to a nice and presentable serving plate. I usually put about 6 rolls on the bottom, then 5 on top of that, and 4 on top of that. But you can do any number of rolls you want. After each layer of rolls I spread them with the frosting. Then I spread the rest of the frosting on top and on the sides.
4. Let the frosting soak in the dessert for about a few hours in the fridge or overnight.
