Kefir Ice Cream Recipe

So I have been looking at my ice cream attachment, for my kitchen aid, for six months and have not had the energy to make anything until I came upon this recipe. I tweaked the recipe and added my own twist to it. This recipe incorporates kefir and coconut and it's so so delicious.

I put the mixture in the freezer and have been having it a couple times a day. It's so much healthier and only has frozen raspberries and honey as a sweetener. It's a great probiotic dessert and takes care of my sweet craving for the day.


Recipe:


Ingredients

4 cups coconut milk kefir ( I used 3 cups of kefir and 1 cup of coconut milk. You can also put 4 cups of regular kefir)

1/2 cup raw honey (melted)

1/4 cup raw cacao powder

1 tablespoon vanilla extract

Optional:

Raspberries

Chocolate chunks

Banana pieces

Walnut pieces


Instructions
  1. Mix kefir, honey, cacao powder, and vanilla extract in mixing bowl, until combined.
  2. In frozen ice cream maker attachment bowl, pour the mixture into the frozen ice cream maker bowl. 
  3. Mix any toppings you want into the mixture. I added chocolate chunks, banana pieces, raspberries and walnuts pieces.
  4. Mix on low for 15-20 minutes. It should form into a soft serve consistency.
  5. I put the extra mixture in a container. I stored it in the freezer.
